Delicious Hot Carrots make the perfect snack for your home made Mexican dinner.

 2 lbs Carrots
 1 Yellow Onion
 1 ½ qts Warm Water
 7 oz Can Sliced Jalapeno Peppers With Juice
 6 Garlic Cloves (whole)
 1 cup White Vinegar
 1 cup White White Vinegar
  cup Vegetable Oil
 2 Bay Leaves
 1 tbsp Dried Oregano
 1 tbsp Salt

Put carrots in a large 3 or 4 quart pot

Add warm water and bring to a boil over high heat

Boil for 5 minutes and then remove from heat

To pot add all the remaining ingredients

Let cool for 2 hours
